The Family Behind Paige’s Bistro
We’re Craig and Paige Bailey—owners of Paige’s Pastries & Bistro and the husband-and-wife team behind the flavors you love. What began as a small home-based passion project quickly grew into something bigger. Paige baked, Craig decorated, and together we built the foundation for what Paige’s Bistro would become.
In 2020, during the height of the pandemic, we launched our first food truck. By 2022, we proudly opened our restaurant in Austell, GA, bringing our Southern Cajun comfort food and signature desserts to even more families across the community.
Paige, a New York native, is known for her incredible cheesecakes and custom desserts. Craig puts his own Cajun twist on classic Southern dishes, creating meals that feel comforting, bold, and completely our own. Everything we make is rooted in flavor, creativity, and the joy of feeding people well.
